The summer is officially over, so to cheer you up, here is a recipe for delicious, seven ingredient gluten-free cookies.

These cookies are quick and easy to make and perfect for dipping in a nice cold glass of your favourite milk alternative or even a cup of tea.

Ingredients

2 cups gram flour 1/2 cup coconut oil, melted 1/2 cup maple syrup 2 tsp baking powder 2 tsp vanilla powder Pinch salt 80g of your favourite chocolate, chopped into small pieces

Method

Start by sieving the flour, baking powder, and vanilla powder into a large bowl. Then, add the rest of the ingredients and stir. Roll into a large ball and place back in the bowl. Then, cover with cling film and refrigerate for at least 2 hours (overnight would be preferable).

Pre-heat your oven to 160C then remove the dough from the fridge and shape into cookies. The dough will be hard but once rolled in your hands, it will soften up.

Finally, place on a baking sheet and bake for 12-14 mins or until golden. The cookies will still be soft when removed from the oven, but will harden up as they cool down.

The recipe makes approximately 8 cookies, depending on how big or small you want them.
