Porridge Bread Muffins:
This is one of easiest and quickest of baking recipes. All you do is mix one 500g pot of natural yoghurt with and fill that pot with oats twice. Then add 2 tea spoons of bicarbonate of soda (pro tip: dissolve in 2 teaspoons of water first). These can be even tastier if you add frozen blueberries or dried cranberries to the mix. Pour into a muffin tin and bake for 20 - 30 minutes at 200 degrees.
Granola bars can be made in advance, tailored with your favourite nuts and fruits and eaten on the run if you have a late start. These started to take over this summer. They are really tasty and refreshing. We tried one in Ethos Dublin and it had toasted quinoa granola, passionfruit, coconut chunks, cacao nibs and bee pollen. Delicious!
This is a great one as it can be prepared the night before. It is really simple to make and bursting with omega 3. All you do is put one part chia seeds, two parts water/milk alternative. Some people like to add a few spoons of their favourite yoghurt.
