The lovely Linda from our bray store kindly submitted this recipe! Its delicious, nutritious and perfect for these cold mornings! 

I have found this combination of ingredients makes a very tasty, warming and nourishing healthy winter breakfast. Great if you’re looking for a break from the usual porridge or eggs or on vegan/paleo diet. And all made in about 5mins (provided you have cooked the sweet potato previously!) I love sweet potatoes so always cook a few extra with this breakfast in mind. I prefer them steamed as this makes the potatoes moist and super easy to mash.

2 Cooked Sweet Potato

1/2 a banana

1 Tablespoon of any Nut or Seed Butter

1 Pukka Vanilla Chai or Revitalise teabag

1 cup of almond/coconut/hemp milk (or half mixed with water if desired)

1 teaspoon of Cinnamon

3 tablespoons of Chia seeds soaked

Topping

1 tablespoon of CoYo Coconut Yoghurt

Superlife breakfast topping

Nua Naturals Bee Pollen

or

Add a bit of whatever you fancy…dates, cacao nibs, coconut flakes, pecan nuts

 

Directions:

1.   If the Chia seeds are not already soaked (handy to soak overnight), cover a handful with cold water and let sit for 15mins

2.    Add Sweet potato, banana, contents of teabag, nut or seed butter, cinnamon, half the cup of milk to a pan and gently heat, mashing contents together.

3.   Add 3 tablespoons of the soaked chia seeds to this mixture as well the remaining half cup of milk and mix contents

4.    Once heated through pour into a bowl, top with coconut yoghurt, sprinkle breakfast topping & pollen or whatever else takes your fancy :)
